A Chef's Review of the HORL Rolling Knife Sharpener

As a chef and knife enthusiast, I'm usually pretty skeptical when it comes to knife sharpeners that aren't whetstones, but the HORL Rolling Knife Sharpener definitely exceeded my expectations.

I've always used whetstones to sharpen my knives, but it definitely took me a few months of practice before I was able to obtain a decent edge. The thing I love most about the HORL is that ANYONE can pick it up and get a razor-sharp edge with 0 prior practice. I'll definitely be using mine for routine maintenance for my 15 and 20 degree knives.

Finally. Ive been waiting on an objective opinion from someone who actually knows something. This sold me as a gift for many of my friends who have been gifted nice knives but cant or are too scared to use/maintain them.

This is perfect, and now, I hope to get one for Christmas time!! I have a few nicer knives, but they are starting to dull, and I would really like to keep them good

Uh… i use Horl for my santoku. The side is 90 degrees. Works great, and my waterstones are collecting dust.

my take on the rolling sharpeners is that the results are (slightly) inferior to somone with decent skill sharpening on proper stones HOWEVER what it loses in slight inferior results it makes up for in ease of use as the system is nearly foolproof
so for someone who can "afford to" be good at using wet stones its not worth it but for someone who see's sharpening/maintaining their knifes as a neccesary chore its definitly worth it

What is the *cost* of Horl vs whetstones for a typical home knife setup? Crucial factor omitted.

is the roller wide enough to sharpen a cleaver? I suppose you would have to elevate the roller perhaps on another block of wood?

would you use this on your japanese knives with zdp or vg10?

Would you say the additional disks and leather are worth it?

Looks like it can do the job BUT the knife's blade shouldn't be too big... My chef knives won't work with this I think.

Why is the HORL not good for single bevel knives? Thanks

I saw a review that praised this product for the first few times of sharpening. After 4 or 5 times of sharpening the knife the diamond stone loses its effectiveness because it flattens out. Every time you make a pass on the knife the diamonds flattened losing its sharpening ability.
