Vegan Lentil Bolognese

So we filmed one of our all time favorite weeknight meal recipes. It’s a super quick and simple lentil bolognese with only a few ingredients you maybe already have at home. Lentils in general are a great source of plant based protein and contain a lot of B-vitamins.

Ingredients (4 servings):

150g or 3/4cups mountain lentils (uncooked)
1 carrot
1 onion
2 cloves of garlic
1 can of diced tomatoes (400g or 14.5oz)
400ml or 1 1/2cups + 3tbs vegetable broth
3tbs olive oil
1tsp agave nectar
2tbs tomato paste
1 bay leaf
salt & pepper
500g pasta (uncooked)
