We have a family owned Motz burgers that was opened in the 1920's here in Detroit. Burgers look the same as this. Had to check to see if he was related - he's not but he should definitely try them sometime.

Instead of mayo I always soak up the rendered fat from my burger patty on the bottom bun before I sprinkle some diced raw onions on bottom bun and place the burger on cheese side down. Then I put either ketchup or bbq sauce on top of the patty before crowning it and eating it.

I dont know about good and bad it all looks deliscous to me with fresh angus beef, a slice of cheese and straight on a bun

1 grind is pretty good if you have the right blend and it tastes ‘steakier’: if it’s too fatty or blended of cuts in weird ratio, yeah the patty can peel apart real easy

That said, I kinda cheat and smash them once on parchment between grind and cook, pressing the second time on the heat to get that lace crust; so I guess that instead of a 2nd grind I do a 2nd smash 🤷‍♂️

IT'S STILL CRAP BECAUSE YOU WON'T GRIND IT THREE TIMES. I've cut meat, I've ground ten thousand pounds of fresh burger. A smash burger needs three grinds not two, all of them really so but your smash burgers still look like crap because you don't three grind.
