I’ve made this burger a dozen times now. Absolutely legendary. Cast iron pan, or flat top. Both are insanely good.

In Oklahoma it is usually made with just mustard as a condiments and no cheese

I personally like to place the onions on the gridle first for about 30 seconds, then add the meatball on top, and press down flat. When I flip the burger once it's almost done I add the cheese, but I prefer to toast my buns rather than steam. I like the cheese and onions together on top because the palate tastes savory, sweet, savory; rather than savory, savory, sweet.

Seasoning before smashing the burger results in seasoning only the center of the burger.
