INGREDIENTS
2 cups (260 g) all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp coarse salt (1/2 tsp if using fine salt)
1 1/3 cup (265 g) light brown sugar (packed)
1 1/2 tsp ground cinnamon
2 cups (305 g) zucchini (grated)
1/2 cup walnuts or pecans (optional)
2 large eggs
1/2 cup (118 ml) cooking oil
1/2 cup (118 ml) milk
1 1/2 tsp vanilla extract
9 x 5 x2 loaf pan
Bake at 350ºF / 176ºC for 45 to 50 minutes or until a toothpick comes out clean
If using an 8 x 4 x 2 loaf pan bake for 55 to 60 minutes

I'm 73 and I thought you should know that I've used your recipe for over two years at least 7 or 8 times. Raised about $400 for our church's cake raffle for our youth camp, also. It's a great recipe and there's a loaf baking right now. Can't wait!

FANTASTIC! I did mini loaves, personally large loaves always cook uneven so I stopped baking like that a long time ago. I followed the recipe exactly. Baked @350 for 45 mins, at the 25 min mark I rotate breads, at the 35 min mark I throw foil on top of the loaves, literally throw a sheet on top of the bread, want to make sure the top doesn’t brown up too much. I do this with my banana bread too. Worked so well!

I made this tonight, but doubled the recipe & added shredded carrots with the zucchini…it came out so good. Great recipe!

Your recipe is wonderful. I made it for the first time yesterday and almost knew from all the positive comments that I would not be disappointed. It smelled so good baking, it was moist and springy, and full of flavor... Perfect ! Thank you!

Made this today. It was The BEST Zucchini bread I've ever had!! I used Almond flour, only 1/4 cup of coconut sugar, Fage yogurt and added a tablespoon of Bacon grease (an amazing secret ingredient my Mom used to add to pie crust) I was in the mood for a Mediterranean flair so I added a teaspoon of dried rosemary and omitted the vanilla. Had an amazing moise texture and perfectly sweet without overkill.

Made this today with fresh squash from the garden. I used coconut oil instead of vegetable oil and it took about 1 1/2 hours until it was done, and it is delicious!

I tried this recipe today and used vegetable oil, added 1/4 tsp nutmeg and roasted walnuts and pecans and it was sooo delicious! My family loved it! Thank you for another simple and tasty recipe.

Perfect timing. My neighbor gave me a huge zucchini along with several other awesome items outta her garden and I had no idea what I was gonna do with it. Problem solved. First thing in the morning I'm gonna make this. Thanks!

I’m making this now and used cinnamon, nutmeg, allspice, cloves and ginger in it. My house smells like LOVE🥰. Can’t wait to taste it! Thank you for this recipe.

Flax seed would be good roughage... Or ground flaxseed added... Or the trilogy, with hemp seed, chia seed & flax seed... 👍👏🤗

This was deliciousl! Even better the next day! Tip: spray the loaf pan before placing the parchment paper in it. If keeps it in place when you pour the batter. I learned the hard way!
