You can place the grated zucchini in a colander/sieve add some salt and wait for a few minutes. The veggie will leach out a lot of water.

No need to squeeze out the liquid the zucchini generates. It adds moisture to the bread. I just made zucchini bread and it was just fine without squeezing the liquid out.

My wife's grandma always makes this, the walnuts make it resemble banana bread! Dab some cream cheese on it and youd never know the difference, stuff is great!
