INGREDIENTS:
FOR THE SPONGE
* 150g Eggs
* 110g Caster Sugar
* 70g All-purpose Flour
* 5g Corn Starch
* 25g Black Cocoa Powder
* 22g Butter
* 15g Milk
FOR THE CREAM CHEESE FILLING
* 300g Cream Cheese
* 75g Caster Sugar
* 45g Egg Yolks
* 6g All-purpose Flour
* 12g Black Cocoa Powder
* 82ml Heavy Cream
FOR THE MASCARPONE CHEESE FILLING
* 125g Mascarpone Cheese
* 33g Caster Sugar
* 2 tsp Vanilla Extract
* 37g Egg Yolks
* 225ml Heavy Cream (Whipped up 50%)
* Bloomed Gelatin (7g Gelatine + 35g Water)
FOR THE TOPPING
* Whipped Cream (50g Heavy Cream + 5g Sugar)
I recommend a 7 inch (17.78cm) cake tin.
