Batter (makes 16 crepes 8.5 inches in diameter):

unbleached all-purpose flour (7.5 oz / 213g / 1.5 cups)
salt (2 tsp Diamond Crystal Kosher / 1 tsp Table)
sugar (2 tsp)
eggs (5.3 oz / 150g / 3 large) weighed without shell
water (8.3 oz / 236g / 1 cup)
whole or 2% milk (8.5 oz / 242g / 1 cup)
neutral oil (1.9 oz / 54g / 0.25 cup)

frozen butter for frying (as necessary)

THANK YOU, Helen! Adding in the mishaps has truly put me at ease. I'll be following your directions for homemade crepes in the near future. (I'm fighting some major vertigo w/terrible tinnitus these last few days, but as soon as it subsides... crepes are definitely in my family's near future). Made this recipe several times and LOVE IT! For the orange sauce (separate video), I just tried using very finely diced KUMQUATS in lieu of orange zest today and I can't recommend it enough! Kumquats taste more like oranges than oranges, and the bright, tart orange flavor they add to the sauce is far more complex than the variable flavor of zest. TRY IT if you can find them!

I couldn't help but notice the 3 "thumbs down" on your video but I did not see any critical comments. The the threshold of difference is where the potential of learning is greatest. I wish they would have expressed why they did not like this session as long as it was constructive. Personally, I appreciate that you showed what can typically go awry and how to remedy each scenario. Cheers to you!

I was thinking of Crepes Suzette but didn't have any Grand Marnier or oranges handy. We wanted breakfast and stat! So I grabbed a half-used jar of lemon curd and made a sauce in the same small skillet as the crepes and oila! Poured the sauce over the stack of crepes, added a little creme fraiche on the side and served it up. Tasty breakfast!
