Hey. What do you do when the pan is already hot, so the batter starts to cook as soon as you drop it on the pan? When I try my spreader then, it just ruins the crepe.

I've been making crepes for years and just realized that a crepe paddle/spinner exists.
My batter is thinner than this and my crepe pans are only 10 inches, so I just tilt the pan until it's evenly coated with batter. I also have two crepe pans going at the same time to speed things up.

What's the measurements of the crepe tool and pan and what's the approx heat? Med, med high? Good how many minutes arty what heat?

The problem is, if you properly use a higher heat (420°F–450°F) so your crepes don’t come out white, the batter will cook long before you get even halfway done with your spinning/spreading. So far, I find it’s best to lift the pan immediately and tilt and shake the batter to the edges.
