In our stomach we have enzymes which breakdown the food even more. Only HCl would not be much effective.

As someone who deals with concentrated hydrochloric acid on a daily basis, it's not as dangerous as some comments make it sound, if it spills on your hand, you won't lose your hand, you will feel itchy at first, then if you don't wash it immediately, you'll feel a slight burn, your surface skin might die if it was exposed for too long and after a day or so some of your skin will peel off (just like when you're exposed to the sun for too long).
It's very volatile (hydrochloric acid is actually gas at normal temperature, but dissolved in water) if you smell the vapors it'll cause irritation.

Teeth and saliva is actually the first stage of digestion. Mash it up, add some amylase, mash it up some more and then add the acid. You'll get a much better result.

Well you got the eye protection part right, but you need gloves and a better containment method than just an open table surface with glass on it. In the world of experimentation, you have to plan for ALL of the what ifs, or eventually you'll learn hard lessons

HCl doesn't do anything to cheese but it activated pesinogen into pepsin, which breaks down proteins in your stomach

You gotta keep in mind rhat digestion starts in the mouth, both the chewing and saliva are important factors.

That's why people that dont chew enough are more prone to acid reflux
