Two signs it’s time to take cookies out of the oven for a perfectly baked CHEWY cookie. Both signs are important, but especially the second one. This is what I look for every time no matter the bake time indicated on a recipe.

1. The cookie appears baked on the edges. It’s starting to brown and has become firmer on the outside.

2. The center of the cookie looks a little underdone. It’s still a little shiny and gooey looking in comparison to the edges.

This is because cookies are still so hot when they come out of the oven, they continue to bake a little more outside of the oven. If you take them out when they’re slightly underdone, they will be perfect once they have cooled and set.
