Pat your steaks dry and only apply salt, this will help draw out the moisture even more.

Heat your cast iron skillet on medium high/high heat and render down some fat in a cast iron pan or use a high smoke temp oil like avocado oil.

Add in your steaks and let them sit for 2 minutes until a crust develops, then flip and butter baste with crushed garlic cloves, rosemary, and thyme.

The reason we’re only using salt for this recipe is because other seasonings like pepper or garlic powder will burn easily.

Alot of flavor will come naturally from the perfectly crusted steak, as well as from butter basting with garlic, rosemary, and thyme.

Make sure to bring it to room temp, I always let mine sit out for 30 min

i find my steaks burn when i get it as hot as i can, should i just do what i’ve done and turn my temp down a bit? i use extra tallow, and that will help it not burn, but moistens the outside of the steak more and makes less of a crust
