Ive heard to just add another piece of american cheese on between the slices AFTER you cut it the first time. Which involves half disassembling the grill cheese in the first place...so your method is better

Food stylist trick is to cut the bread and leave an unsliced piece of cheese between the bread and pull it apart after it's cooked.
