That’s why I don’t hit flop shots. I had a 48 yard lob/flop shot I needed to hit today. Surprised myself and got it to stop 8’ past pin. Could never have done that last year!

9-iron is kind of my go-to around the greens. It's very easy to hit it a little bit high if needed and equally easy to deloft a smidge for the low runner. If there's a LOT of green to cover, then 8 or even 7-iron. If I need more loft, 52º wedge. If more loft than that is needed, then 58º, but as you say, those instances are very rare. Usually if I need to hit 58º around the green, something has gone badly wrong with my previous shot, indeed.

Most pitch shots I hit with 52º.

A pitching wedge is for pitching.
A SW is for sand..
60 deg is a lob.rarely use
Learn to use bounce on SW (56) deg and hit those high shot.

Practice your flops every day for wrist and face control. And never use it on the course.

Good players use all those shots, including the miss at the end. Try different amounts of cut in your swing (outside in) to control the roll.
