Pork Loin Roast

INGREDIENTS
2 pounds (900 grams) pork loin
2 tablespoons vegetable oil
2 tablespoons light soy sauce
1 teaspoon smoked paprika powder
Salt
1 teaspoon coriander powder
1 teaspoon dried thyme
Pepper
1/2 cup (125 ml) water

PREPARATION
Preheat the oven to 360°F/180°C.
Take the meat out of the fridge and place it on your working surface.
Make a few cuts over the meat, about 0.5 inch (1.2 cm) deep.
Pour the vegetable oil and light soy sauce over the meat.
Separately, mix the spices on your working surface.
Place the meat over the spices and rub them all over the surface of the meat.
Place the meat on a baking tray and pour a bit of water.
Cook the meat for the next 90 minutes.

Wow it was wrong to put oil then soy sauce... because oil is great for dry rubs. I would do SS first marinate for 1 hour then add the spices and oil.

When she turned that oven to 90 min all I could think was “dry”.

Pork loin takes 30 min at most. Pull when internal temp is 145F

I'm a Caterer. I will give you piece of advice, Never over cook a Pork Loin. It will be too dry to eat.
The ingredients are perfection, just cook it to a Medium rare it will be juicy.
