The thing is the seal was constructed by the knights so it's really more of a temporary stopgap against an intruder than a legitimate way to annul the power of the grail since presumably after it's removed its power could be reinvoked in an area again with enough know how and how to channel its divinity.

Honestly, I don't think he would've died like that. Likely would've just started aging from the point he had stopped.
Seeing how old he is, he either took up the job while really old or he at least stepped out into the sunlight every now and again.
