A well-articulated explanation and decent video however I am discouraged and confused by the assignment of "V" for individual points in the electric field.

In my understanding, the symbol "V" in electric interactions denotes Electric Potential (and consequently, Voltage/Potential Difference), and Electric Potential is defined not for individual points in the field but for two separate points, between which a test charge moves. I think you referred to those "V" values as electric potential as well.

I found this very misleading. If anyone can proffer an interpretation of this, or correct me if I'm wrong, I would appreciate it as I am still struggling with these concepts.

A possible explanation may be that there is an unknown charge that has been left out of the drawing, with unknown location and magnitude. And so maybe it is assumed that the audience can infer that "V" represents the Electric Potential between that given point and the unknown charge. But that wasn't so clear... to me at least.
