Sourdough, Sweet, Flaky & Loaded with Chocolate – Try These Buns!

I made Sourdough puff pastry with chocolate paste, and the result was absolutely delicious! Here’s how I did it:
Ingredients
Dough:
100 g (1/2 cup) sourdough starter
300 g (1 1/4 cups) water
1 egg
550 g (4 1/3 cups) all-purpose flour ( if the dough is watery, add more 50 g of flour)
100 g (1/2 cup) sugar
10 g (2 tsp) salt
150 g (2/3 cup) butter
Filling:
Chocolate paste
Preparation
1️⃣ Making the dough:
I mixed all the ingredients and kneaded a smooth, elastic dough. I left it to rise overnight—first for 4 hours at room temperature, then overnight in the refrigerator for slow fermentation.
2️⃣ Shaping the pastry:
The next day, I rolled the dough into a large rectangle on the table and evenly spread a layer of chocolate paste over it. I carefully rolled it up, forming a long rectangle. Then, I rolled it out again, added another layer of chocolate, and rolled it up once more.
3️⃣ Forming the buns:
I rolled the dough into a long rectangle again and cut it into thin strips. Each strip was twisted and shaped into a round bun, similar to a snail shape. I placed the buns on a baking tray lined with parchment paper and left them to rise at room temperature for 2 hours.
4️⃣ Baking:
I preheated the oven to 180°C (350°F) and baked the buns for 45 minutes until they turned golden brown and crispy.
5️⃣ Making the caramel topping:
While the buns were baking, I made a simple caramel using:
100 g (1/2 cup) sugar
50 ml (3 tbsp) heated liquid cream
I melted the sugar over low heat until it turned golden brown, then slowly poured in the hot cream, stirring constantly until smooth and well combined. (After pouring in the whipped cream, I put the saucepan back on low heat for 2-3 minutes until the caramel is smooth.)
6️⃣ Final decoration:
Once the buns were out of the oven, I drizzled them with the warm caramel and sprinkled salted peanuts on top for a crunchy contrast. To finish, I added melted chocolate for extra indulgence.
The result? Soft, flaky, and full of chocolate goodness with a rich caramel glaze! 😍 Perfect for a special treat!
