Sheet Pan Cilantro Lime Chicken & Rice🍋🟩🍽️🌿 Recipe👩🍳 Ingredients:
1 cup jasmine rice
5 tbsp olive oil
1 lb boneless skinless chicken thighs Olive oil
2 tbsp minced garlic
4 limes
2 roma tomatoes
1.5 cups broccoli
1/2 onion
2 tbsp spicy honey
1 tbsp ground cumin
1 tbsp paprika
2 tsp crushed red pepper
Salt & Pepper
1 bunch fresh cilantro finely chopped
5 oz plain Greek yogurt
1/2 avocado Optional - Feta to sprinkle on top
1. Chop broccoli, tomatoes, onion, and cilantro and cut the chicken thighs into quarters, trimming any excess fat
2. Preheat your oven to 400F and line a large baking sheet with foil 3. In a bowl, combine chicken,
4 tbsp olive oil, 1 tbsp spicy honey, the juice from 2 limes, garlic, all of the seasonings, and 1 tsp red pepper flakes (or more based on spice preference). Allow it to marinade for at least 30 min. 4. Add broccoli, tomatoes, onion and chicken to pan and bake for 20-25 minutes, or until the chicken is no longer pink on the inside
5. While it’s baking, make the sauce:
6. In a food processor, blend avocado, yogurt, 1 tbsp minced garlic and spicy honey, ¼ cup cilantro, juice from 1 lime, and ¼ tsp salt (add a splash of olive oil or water if it’s too thick) *
*Cilantro Lime Rice**
1. Add 1.5 cups water and rice to a medium saucepan with 1 tsp olive oil
2. Bring to a boil, cover, and reduce heat. Cook for about 15 min
3. Stir in 1 tsp garlic, 1/2 cup cilantro, juice from 1 lime, 1 tsp lime zest and the other tsp of red pepper flakes Add chicken & veggies over the rice and top with the sauce and fresh cilantro.
