Other than being a Fiat your Motor home is set up quite nice.All though I find the cassette thing weird but I am from US and we have dump stations all over. AkA septic tanks.Even in some road side rest.Keep the shiny side up. Really enjoy your adventures. I like your manual transmission too. Very Cool. impossible to find in US.Unless custom. That would be a a class C coach.

I could always see your motor-home was so spacious and so well laid out, a really good choice indeed, I love it. But could you please share the cost of road tax and insurance, I'm guessing this will be quite scary or I may be wrong :) Thank you.

Just a thought, for the drop down bed, won't the ladders store on top of the bed to avoid going outside like you said?

Hymer build a nice van, you could keep it for years if you wanted to. I have a similar size, not Hymer, but very happy with it. Twin beds as we thought about similar things as yourselves.... But are older 😏.
Maybe, if the piggy bank allows, think about refillable lpg tanks for cooking and heating? Much cheaper and easier to replenish if you venture abroad.
Have you got an inverter yet? I'm thinking about getting one for the boss' coffee maker....🤔
