I made something INCREDIBLY similar with ground pork earlier this week. I was following a Vietnamese recipe I found that also included silken tofu sliced and put around the edges. When I put that over rice and topped it with chili oil it made for the easiest mapo tofu I've ever had...

I absolutely LOVE that you mentioned touching the meat with one hand and everything else with the other! So many people cross contaminate everything in their kitchen because they don't do this or even wash their hands between. Thank you for the much needed PSA!

what my cantonese family does as well is mix the meat with some water to make a paste. it just makes the consistency taste more “fluffy” and less like a dense patty. other things you can add are oyster sauce, dark soy sauce, water chestnuts and ginger!

Just made this, but used my rice cookers steamer attachment to cook rice and the patty at the same time so the sauce from the party dripped down and flavored the rice 😋 so delicious

The colander is necessary when steaming so the toxins can go down into the water. If you put a plate, all the toxins remain on the plate, from the sweet potatoes to the tilapia. People can feel very sick. It's good to use two colanders so only the steam touches the food. Excellent video quality.

My roommate used to steam minced pork, rice vermicelli and fermented black beans in a thin cake like that. Maybe an egg too. Fond memories....
