Croissant dough can be made the same day and here’s the proof.
I did 2 different doughs. One was mixed night before and chilled in fridge overnight ( detailed instructions on the process can be found on my website⬇️

The other dough was mixed in the morning ( details ⬇️)

7 am mix the dough make sure gluten is developed and windowpane is present, let ferment at 26-28C for 40 min(recipe is on website)
7.40 am move the dough to freezer for 40 min until dough will reach 4C
8.20 am move the dough to fridge for 20 min (at 4C)
8.40 am 1 double fold 1 hour rest at 4C
9.40 am 1 single fold 1 hour rest at 4C
10.40am final roll, shape and proof for 3-4 hours .
Bake. Enjoy 😉

Can u buy the dough like that in a store? So all I need to do is roll in the butter and bake? Is that sold anywhere? Or does anyone know what it would be called that pre-adding butter dough? 🙏
