1.5 tbsp. Sun-dried tomato paste
30g fresh basil
1 tbsp. Crème fraiche
1 white onion or shallot
3 garlic cloves
80ml white wine
350g cherry tomatoes
250g mushrooms

Butter bean, Mushroom & Leek Bake (4/6 servings):
700g good quality butter beans
150g cavelo nero
250g mushrooms
1 leek
40g breadcrumbs
1 sprig thyme
2 tbsp. tamari
salt & black pepper
extra virgin olive oil
cheese sauce:
50g real butter
3 tbsp. plain flour
350ml milk of choice (I used almond)
130g medium or mature cheddar (use 30g for topping)
1 tbsp. Dijon mustard
1/8 tsp. nutmeg
black pepper
Lemon grass coconut chickpea curry: (2/3 servings):
350g cooked chickpeas
2 carrots
1 white onion
3 garlic cloves
1 inch thumb ginger
1 red pepper
200g spinach
¼ tsp. chilli
1 lemongrass stick / 1 tbsp. lemongrass paste
1.5 tbsp. tomato paste
½ tsp. fennel seeds
1 tbsp. cumin seeds
1 tsp. coriander seeds
30g fresh coriander
2 tbsp. coconut oil
400ml coconut milk
½ cup water (add more if necessary)
