Really good advice! I had this issue a few weeks ago at an event. I didn’t think about using a roller. I just had to reball and wait a couple of hours for them to relax enough to use. Nice vid!

Can too much yeast overpoof the dough? Also how much fresh yeast to 500 grams of flour do you recommend? I've been using 10. One more thing, I find that I need a warm surface for my dough to rise, if I leave it on just the counter, it doesn't really rise. I put the dough in a bowl and I place that bowl into warm tap water for an hour.
