Despite all this, Vader still held a grudging respect for Tarkin. When he was getting mocked by the new Grand Moff (in Canon) calling the Death Star Tarkin's folly, Vader defended the man on his behalf, saying at least Tarkin had vision while the new Moff only had graphs

This is the whole reason The Emperor forced them into working together. After the events of the Tarkin novel, as well as when Tarkin hunted Vader, their relationship had definitely changed. Tarkin even referred to Vader as "my friend" in A New Hope. Plus I think the fact that Tarkin would blow up a whole planet of people to safe guard the Empire against militant rebel terrorist made an impression on Vader. Vader and Tarkin were a perfect pair. The Emperor just had to get them to see that.

Tarkin got balls to stand up to Vader like that, but I'm not surprised. The novel Tarkin is my second favourite Star Wars book, also i've read Thrawn. I wonder who would win between Tarkin and Thrawn with each of them in command of their own army.

Sorry, I do not consider Rogue One as Canon. Dark Forces series is Canon. Kyle Katarn was the one that stole the Death Star plans.
