How to Make Lemon Curd #shorts

2 x Whole Eggs
2 x Egg Yolks
100g x Caster Sugar
100ml x Lemon Juice (juice of 4 Lemons)
75g x Unsalted Butter (diced)
Juice of one lemon (add at the end)

1. Crack 2 eggs and 2 egg yolks into a mixing bowl followed by 100g of caster sugar and the juice of 4 lemons. Whisk all of these ingredients together.

2. Bring a pan of water to a gentle simmer and place the bowl over the top. Make sure the bottom of the bowl does not touch the water.

3. Keep whisking until the mixture thickens up.

4. Once Thick and creamy take off the heat and whisk in 75g of diced unsalted butter

5. Squeeze in the juice of one lemon.

6. Mix. Pass the lemon curd through a sieve and place it into a tub or bowl and cover it with cling film, pressing it to the curd to prevent it from forming a skin while it sets in the fridge.
