Lemon Curd

Ingredients
1 1/2 cups sugar
1 stick butter
zest of 1 lemon
1/2 cup lemon juice
4 eggs

Instructions
In a food processor blend sugar, butter, and lemon zest. Then add eggs and lemon juice and blend again. Pour into a small sauce pot and cook on medium low heat until thick and creamy. Pour through a strainer and store in the refrigerator.

Nice quick method with food processor and not much washing up.

Done without the sugar. I made LEMON BARS last night. I like this method better.

There was 0 reason for that food processor. And you’re not blending anything with those blades you could of done the same with a spatula.
