Best Lemon-Blueberry Scones

These are my favorite blueberry scones. The recipe has been adapted from the buttermilk scone recipe in the Tartine Bakery cookbook, which calls for currants. Buttermilk, a good amount of butter, and a hint of lemon juice make these truly delicious.

I'm making these this morning! My dough for some reason was more wet. The only substitute I made was orange zest instead of lemon. I measured using grams on a scale as well. About to bake in a few mins. I hope they come out as nice as these.

Looks so delicious. I typically use heavy cream - and steep the zest in it. I’ll have to experiment and see which method delivers most lemon flavor. ☺️

You have to chill the dough before rolling out. Also, once cut - you have to put back in and chill for 30 minutes before baking. This helps retain their shape. That's why your scones all fell apart when you took them out of the oven. They didn't retain their shape.
