Carla Makes Pasta with Sausage, Broccoli, & Parm

This extremely pantry-friendly pasta is a crowd-pleasing riff on the classic pasta, orecchiette with broccoli rabe and sausage. I originally replaced the more bitter broccoli rabe with regular broccoli to appease the palates of more than one member of my nuclear family, but it is seriously good either way. As far as other liberties, I’ve added ricotta for extra creaminess at the end, and a big squeeze of lemon brings a smack of sunshine to the sauce.

God bless you Carla ❤ I am Italian, from Bologna, and you are only person I enjoy watching pasta recipes, because you do it like an Italian would do. Please people do follow this girl here to know how it’s done. No overcooked pasta, no strange ingredients, great flavors. And parm with broccoli is totally fine but you are right, maybe i pugliesi (people form Puglia) would not agree..but here in Emilia we do it 😅

Just made this for dinner tonight. This was the first Carla recipe I cooked, and it did not disappoint!! Adding the lemon and the seasoned ricotta was genius. My wife and I devoured our food. Thanks for the great recipe!

I love everything you're doing and your kichen is gorgeous. You made me laugh when you mentioned when the sausage gets brown, don't let family come in and grab some I love how you save the crispy sausage for the end so we can get soggy this was excellent

In culinary school, we weren't allowed to peel broccoli stems with a peeler. Instead they had us use a paring knife to get under the thick skin, hold the bit of skin between your thumb and flat off the knife blade, then pull the rest of the thick skin off in large strips! It works surprisingly well for less effort than using a veg peeler.

This is exactlyyyy my flavor pallet. Like fusilli with broccoli and parm and garlic AND sausage. Like wow. Then u added the ricotta. My GAHD. So good

Literally just watched this and am now making it for lunch! Don’t have sausage, but there’s some broccoli in its last legs, a kinda dried out lemon, and some ricotta in the fridge, so its happening. Also have family from Puglia! Lunchtime win 🎉
