In NK Jemisin’s short story L’Alchimista, a grumpy perfectionist chef in Milan, is challenged by a stranger to cook extremely complicated “recipes” that have magical results. You made me remember this wonderful story.

I've started to give the carrot a head start in the food processor when making a sofrito. Makes the carrot a bit finer, but helps avoid the chunks!

I made this today as a New Year gift to myself and my family and everybody (including my 4 year old) LOVED it! Be sure to serve with bread to sop up all the delicious broth. I made this. It's delicious!! True you don't need stock. This is the 1st time I cooked down the sofrito so much. It really made the difference. Also, lots of youtube cooks demo recipes that have no flavor NOT CARLA!!!! Believe, it's amazing.

We make escarole, Italian sausage and cannellinni bean soup. Also keep parm rinds in the freezer.
