This recipe is from my book, Where Cooking Begins: Uncomplicated Recipes to Make You a Great Cook

ALONE PASTA! Even when there is nothing to eat,
there is always spaghetti aglio e olio.
I put lots of parsley in this version—
maybe enough to convince myself that I'm getting a serving of greens. Keep this
dish in mind when you’re staring down a
bunch of herbs in the crisper drawer.

YESS!! I have never heard a cooking content creator address the positive impact of eating small fish before! It is so so true though. I have a B.S. in Natural Resources and it is vital to our oceans and fisheries (and also our health) to focus more on eating small fish. They are more a more eco friendly resource and they are much more abundant! Absolutely love you, Carla ❤

This is my son's favorite pasta. I made it for him once and now he will request "the good spaghetti" at least once a week and is disappointed when I make pasta with any other sauce. Truly a boy after my own heart.

I am from Modena, and I’m always skeptical about American/italian pasta dishes because they are never as an Italian would cook pasta ..except for Carla’s recipes which are always on point and inspiring. I usually add to aglio e olio also fresh peperoncino 😊

I love using Filipino garlic for this! You basically pickle garlic cloves in rice vinegar for a good two weeks. It gives the garlic a nice acidic bite to it, and bonus: the garlic turns blue if you pickle it long enough and looks beautiful!!

I made this for dinner and it was out of this world perfection, I did a sourdough bread crumb topping with a touch of garlic and parm and *chefs kiss* DIVIVE! thank you for sharing :)

So happy you added anchovies. For those who have never tried them or are afraid... when cooked, they have a peppery flavour to them, nothing fishy. ps: if you make your own Caesar dressing and you are not adding anchovies (or paste) you are not making Caesar dressing.

I've found if I can't sleep, I'll get some leftover spaghetti and mix garlic with it in a frying pan. A little salt, a lot of butter, some olive oil. Yum. I eat it and then sleep like a baby. Making sure I brush my teeth after eating it. Cause you know...morning breath.

Yum. I make this a lot (ever since watching the movie ‘Chef’) pretty much exactly the same but I also add some lemon juice when I add the parsley. It is definitely my go-to “alone pasta” when hubby is working late. So easy and so tasty and ALL FOR ME!!!
