10 gal of sap = 1 quart of syrup +/-. The sugar content of the sap is always changing from run to run and can decline if the sap is stored for a few days. Lower sugar sap = longer time boiling = darker syrup. All syrup is the same sweetness (same % sugar) reguardless of color grade. The darker the syrup the stronger the maple flavor. The light syrup is better for making maple sugar where you may not want a lot of maple flavor. We take a lot of orders for our maple syrup and we find by far the Extra Dark is the most in demand.

last year Wifey and I were driving through Vermont and went to a sugar shack just off Rt 22. The grades of syrup were light and dark. Asked him what was the difference, he said that the lighter syrup was from the early part of the season when the sap was flowing fast. As the season winds down the sap slows and that is were you get the dark syrup. The dark has a stronger maple flavor than the light. Your doing great.

Very nice video. I'm so glad to see that YOU DO sit down a d relax once and a while and that it was cough on camera so we can see the Resting Al! You still have more energy than a classroom full of 6th graders after lunch and before gym class!

Awesome video. I love the star, you know Texas is the lone Star State, the only country ever to join the union. The star is a great addition to your outdoor kitchen. With ten gallons of sap you should get about a pint, or maybe a little more, of maple syrup. Your syrup is clean, not much scum, and your product is great. Just my guess of course. I can almost taste the pancakes laced with the syrup. I think the ratio is about 40 to one. God bless America.

Star looks nice on the kitchen. Great looking syrup. YUMMY. Too bad Olivia you missed licking the pot. :-) You can keep the short bottles for yourself and give or sell the  full ones. It's early in the season and you should get a lot more this year. Maples are just budding out here in IA.

Hello I see that you have two big propane tanks at the house. What I would do is have another one delivered for out door kitchen it would be cheaper in Long Run .it will cut cost in half it did for me

I started watching your channel when surfing and found your barn build and decided to watch all these old videos. Really great content! I just had to post on this one, because I laughed out loud when you said you would have a nunchuck flying around. I know you meant a throwing star, it just struck me as funny. Hey Al just fyi u can fill ur propane tanks at tractor supply its only $5-7 here in maine for a small tank refill! The hydro is good for 10yrs on those tanks.
