I've never tried maple syrup- I don't think anyone uses it at all in my country, but we drink birch juice every spring. If it is real, then it is a really pleasant and refreshing drink, a slightly sweet drink. I once saw a jar of birch syrup, but considering that tens and hundreds of liters of juice go for a hundred grams of this, I generally consider such a thing to be the most overcomplicated product I know about.

You missed the most important part...yes, needing 40 gallons to boil down to one gallon. The process takes a consistent temperature of boing, not up and down, to get the color and clarity. It's not syrup when tapped, it's clear and sweet 😘🥰
