Seen a lot of your videos, enjoy them for sure. I butcher all my own wild game. Basically self taught. Can you speak to why you cut “chunks” off with multiple muscle groups instead of selecting each individual large muscle?

U can take out the tritip while it's hanging before cutting off the knuckle tip it's less work and it's faster and way nicer cuze ur pulling out the whole muscle 😊

I like to take the tri-tip off while it’s still hanging. Is it easier to do it that way take it all off or is it just preference?
