Sweet potato is the new toast!

Ok ok it's not. But it's hella delicious and WAY more filling than bread!! Here's why I'd choose sweet potato over toast ANY day of the week:

✅It's lower in calorie density (calories per pound. Sweet potato = 500 calories per pound approximately whereas bread is over 1300 calories per pound)

✅It's higher in satiety (a fancy way of saying you're full and satisfied, which is pretty important if you're not wanting to gorge yourself on butterscotch pudding later on.)

✅It's higher in fibre. Meaning less calories absorbed, takes more calories to metabolise and better for your gut microbiome (which eat the fibre and then make magic from it)

All I do is cook japanese sweet potato in half (flat side up) then reheat in the airfryer to make toast (or squash it and shove in the oven at 450 F.)

I like to store mine and reheat it up in the air fryer.

On top I add avacado lemon or lime, salt and pepper, chili flakes, and toasted sesame seeds.

In america or, in Georgia, there area some japanese sweet potatoes at some stores, skins are more deep red - some are orange but some are white and they are buttery and creamy! Hard to find in my area. Also the standard orange ones are everywhere. Whole Foods and Sprouts has them.

I’m seriously considering turning vegan just to eat potatoes everyday! The only thing holding me back is protein and vitamins. Im so worried I don’t know how to balance my diet with enough protein or that I’ll have a vitamin deficiency by cutting out meat. Are there any reliable sources for transitioning from a meat diet to vegetarian that you all might know of?

I’m in the US I just do 400 F for 40 minutes but my sweet potatoes are orange not purple
