Picanha!? YES!... Dry age cooks a lot faster. I always cook 1/2 the time than fresh as it has lower moisture content. Great cook Roel! Next time send me an invite.

Very good video. Glad you did this one. So many folks automatically assume that dry aging always results in the best taste. They are wrong on occasion!

My first dry age was a 45 day aged picanha, and it turned out great! Did a ribeye at the same time, and i honestly feel like they both gained the same benefits (tenderness, blue-cheese/nutty notes). My friends accually enjoyed the picanha more than the ribeye! Give it another go for maybe like 35-50 days - i promise you will get great results.
