In Dragon Ball Super: Superhero, Gohan says Saiyans grow big all at once to explain Goten and Trunks' height, but that isn't true when looking at Goku, Gohan himself, and especially Future Trunks.

I heard of a theory that says Saiyans grow or mature faster in stressful environments. I think it makes sense because Goten, Present Trunks, and Kid Goku had relatively peaceful childhoods while Gohan and Future Trunks did not.

But realistically Toriyama probably just doesn't give a shit.

I think just for our own headcanons he’s talking about epigenetics, stressful events and environments cause saiyan bodies to accelerate their development in a way to deal with and face head on their environments. Peaceful times mean regular human development but a battle or harsh training like gohans or trunks’ causes the body to mature faster to compensate and meet the requirements to deal with the environmental pressure for survival

You can try to stretch to find a solution, but we all know it’s because Goten and Trunks are factored as “cute” in terms of marketing in Japan and could only grow once Bra and Pan were introduced to take their place as the “marketable cute”
