Banana Bread For Two

What are you going to do with that one over ripe banana on your counter… Here’s your answer, it's a dessert for two, it's a round banana bread. The chopped pecans give this banana bread a great texture, but you could swap them out for walnuts. The yogourt keeps it moist and adds just a little zing.

Ingredients:
60 mL (¼ cup) sugar
15 mL (1 Tbsp) butter, melted
1 ripe banana, mashed
15 mL (1 Tbsp) yogourt
2 mL (½ tsp) pure vanilla extract
1 egg
125 mL (½ cup) all-purpose flour
2 mL (½ tsp) baking soda
Pinch of salt
60 mL (¼ cup) pecan pieces

Method:
Preheat oven to 180ºC (350ºF)
Grease a 6" round cake pan.
In a bowl whisk together butter, banana, yogourt, vanilla, and egg.
In a another bowl whisk together flour, pecans, baking soda, salt, and sugar.
Stir the flour mixture into the banana mix and transfer to the cake pan.
Smooth the top and bake for about 20-25 minutes.
Let cake cool for 10-15 minutes before removing from pan.

My wife gifted me with 2 overripe bananas the other day and I thought what would Glen do with these? A quick search found this video so I made the recipe to surprise her. I don’t have a 6” cake pan and since I had 2 bananas I used a 9” pan, doubled the recipe and increased the baking time to 25-30 minutes. As a 9” pan has 2.25x the area of a 6” pan this worked very well. Since Julie encouraged us to make the recipe our own I chose to sprinkle some semisweet chocolate chips over half of the pan to provide a couple of taste choices. Delicious! My wife and I like both the original and the chocolate version so we’ll be making this quite often.

I use bananas in place of egg/oil, so I could make a seriously banana bread today, because the spotted bananas were on sale last week (25c a pound), and I let them tan more (fun fact, it’s melanin in banana skins, just like ours) and filled my freezer bag.

Thanks for inspiration.

I may gild the lily by doing so, but I always put semi-sweet chocolate chips in my banana bread.

I used to peel from the stem end, but I've been converted to peeling from the other end now. It's easier to open the banana without squishing anything. It's a game changer!

haha . I just saw this and realized I too had one brown banana, so I made this recipe, but it seemed like too little batter. As I was cleaning up while the cake was cooking, I spied the banana still on the counter. DRAT!

I love these "for two" shows/recipes. I like that they make experimenting so much more accessible. If a change fails, it wasn't many ingredients or time to put it together, on to the next experiment.

I don't know what the freezing does to the bananas, but I love the texture for including them as ingredients after they defrost from the freezing.

Like you, I freeze them when they get over ripe. I fixed massive amounts of banana bread at Christmas last year for gifts, along with strawberry bread, and zucchini bread. People loved getting the three together.

Had a frozen banana left in the freezer, made this recipe. Added cinnamon, vanilla, and a bit more salt (i like my baked goods saltier). Put it in a small loaf pan. Super delicious.
