Kung Pao Chicken Wings recipe:
**Kung Pao Chicken Wings**
**Ingredients:**
- 1 pound (500g) chicken wings or drumettes
- 8 mild dried red chillies
- 2 tablespoons vegetable oil
- 2 tbsp garlic cloves, finely chopped
- 2 tbsp teaspoons finely chopped fresh ginger
- 1 teaspoon crushed peppercorns
- 1 tsp chilli flakes
- 1 teaspoon sesame oil
- 2 spring onions (scallions), sliced (green and white parts separated)
- 1/4 cup crushed or finely chopped roasted peanuts
**Marinade:**
- 1 tablespoon light soy sauce
- 1 tablespoon pineapple juice
- 1 tablespoon honey
**Sauce:**
- 1 tablespoon white vinegar
- 3-4 tablespoon water
- 1 1/2 tablespoons caster sugar
- 2 tablespoons light soy sauce
- 2 teaspoons dark soy sauce
- 2 tbsp cornflour (cornstarch)
**Instructions:**
1. Preheat your oven to 200°C/400°F.
2. In a glass or ceramic bowl, combine all the marinade ingredients. Add the chicken and ensure it's coated. Let it marinate for at least 10 minutes, or ideally overnight if possible.
3. In a separate bowl, combine all the sauce ingredients and set it aside.
4. Cut the dried chillies into 3-4cm pieces using scissors.
5. Spread out the marinated chicken wings on a baking tray and roast them in the preheated oven for about 30 minutes, or until they're cooked through and golden.
6. Heat vegetable oil in a wok over medium-high heat. Add the garlic, ginger, the pale part of the spring onions, the chopped chillies, and the crushed peppercorns. Stir-fry for about 30 seconds. Then, add the sauce and let it simmer for 1 minute or until it thickens. Add the roasted chicken along with its juices and stir-fry until the sauce becomes thick and glossy. Finish by drizzling sesame oil and tossing through the green part of the spring onion.
7. Serve the Kung Pao Chicken Wings, garnished with crushed or chopped peanuts. Enjoy!
