Ingredients
1 cucumber, cut into chunks
2 cloves garlic, finely chopped
1 thumb size piece of ginger, finely chopped
1 spring onion, roughly chopped
8 dry whole red chillies (soaked)
1 tsp Sichuan peppercorns
1 tsp chilli flakes

Sauce
1 tsp sugar
1 pinch white pepper
3 tsp of the dry chilli soaking water
2 tsp sesame oil
1 ½ tbsp black vinegar
1 tbsp light soy sauce
Dash of dark soy sauce

This sounds good. We usually think of cucumber as a cold vegetable but I bet it pairs well with the spice!

Looks really tasty. Like to try it but am very much afraid that I won’t reach that smokey heat for flash-fry on my (induction) kitchen stove. Any tips? 🙏🙏

I would add a tsp of cornstarch to the sauce to help it coat the vegetables a little better.

Question: when the oil is smoking hot doesn’t the garlic then not get burned very quick?
