Beef & Noodle Stir Fry
Ingredients
• Approximately 500 grams (1.1 lbs.) beef steak, cut into thin strips, about 8 – 10 cm long (3 – 4 inches long)
• 150 grams (5.3 oz) Chow Mein noodles or Asian egg noodles (typically 3 nests)
• 2 red bell peppers, sliced 8 cm long X 3 cm wide strips (3 X 1 inch strips)
• 2 garlic cloves minced (2 – 3 TSP)
• 15 grams (1/2 oz) (1 – 2 TBSP) minced ginger
• 4 spring onions (green onions) sliced in half then into 8 cm (3 inch) strips
• 1TSP Chinese 5 Spice (Alternate: All Spice)
• Extra virgin olive oil (or vegetable oil) – enough to lightly coat noodles
• Corn starch – enough to lightly coat the steak strips
• Sauce: 3 TBSP of each ketchup, soy sauce, hoisin sauce and rice vinegar – mix.
• Oil for frying (vegetable oil, peanut oil, sunflower oil etc)
• Salt to taste

Process
• Cook noodles in boiling water as per instructions on the package, drain, and drizzle extra virgin olive oil to lightly coat – toss
• Season the steak strips with the Chinese 5 spice and then add enough corn flour to lightly coat the steak strips
• In a wok (or frying pan) add 3 TBSP of vegetable oil and fry the steak strips until cooked – remove and set aside
• In the same wok (pan) add 1 TBSP of vegetable oil, then add the garlic and ginger – fry for 30 – 60 seconds, then add the red bell peppers – fry for 3 – 5 minutes, stirring regularly
• Add back the beef strips, toss to coat, and fry for 1 – 2 minutes
• Add the spring onions, and fry for a minute, then add the sauce and continue to cook for another minute or 2
• Add the cooked noodles, toss to coat and mix, cook 1 – 2 minutes. Enjoy
