First searing as a whole cut, slicing into thick steaks and second searing for each steak separately. 3 minutes rest before cutting. Thin piece cut against the grains. Just perfect! Cooked to perfection with my @meatermade ThermoMEATER+ till internal temp 53C/130F. cheers! 🍻
