Pasta alla gricia is the oldest of the four classic Roman pastas and is the "Grandfather" to the traditional carbonara, cacio e pepe, amatriciana! These other dishes have gained popularity, but "alla gricia" hasn't found the same love. It's such an underrated recipe, so if you haven't tried pasta alla gricia, now is the time!

🥑🍓🥦🍉🍋 INGREDIENTS 🥔🥚🍫🧁🎂🍰

200 grams (7 oz) guanciale (or more if you prefer!)
100 grams (1 1/4 cup) pecorino romano cheese
300 grams (10.6 oz) pasta (I used rigatoni)
several cracks of black pepper
18 grams (1 tbsp.) salt, for the water

O that looks so good. I can imagine the flavour.
The guanciale fat cap and seasoned trimmings I'd render down and use for stock or a soup.
