One thing I noticed is his blood sugar starts on the low normal side. I would think if you wait until you are quite hungry, your blood sugar is low. Then the spike shouldn't be as high. I'm no doctor

If you want the full effect of that sour kraut, don't warm it up.. Top your melt with cold kraut
