Recipe for Korean Japchae

250g sweet potato noodles (dangmyun)
8 small shiitake mushrooms (soaked and thinly sliced)
250g beef (I used Japanese thinly sliced beef for hot pot)
1 carrot (julienne)
250g spinach
3 small bunch of spring onions (green onions)
1 tablespoon sesame oil
2 eggs
2 tablespoons oil
1 clove garlic- crushed
roasted sesame seeds for extra garnishing

Ingredients for beef marinade
2 cloves of garlic - chopped
2 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon sugar
2 teaspoons mirin

Ingredients for seasoning
2 tablespoons soy sauce
1 tablespoon sugar.
