I'm so excited about this! I want to learn to can so much, but I'm a little nervous to start. Most videos assume I know more than I do. My mother canned, but I never learned from her. I have her old canning stuff. I do have a few cookbooks, a couple old Ball ones, too. Can you water bath beans? I have a 25 lb. bag of dried pintos and was hoping I could learn to can on those, since it won't be tragic if I completely fail. Anyway, I'm so glad God led me to your channel! Thanks!

I have been canning, freezing, and dehydrating for over 40 years. My books on food preservation go back to putting up food from your victory garden. Love the focus on water-bath canning. I would like to see some recipes using canned foods, if possible. Many blessings.

This is very helpful! Which book/s would you suggest for troubleshooting or someone that has lots of "does this look ok?" or "is this normal?" Also do these books let you know what is optional or alternative ingredients that are safe? You did a wonderful video on pectin that was very helpful. I always thought canning required pectin in order to be safe. I'd rather leave it out so your video was a blessing. I made a canning mistake and felt really discouraged (used a book I thought was reputable) so I had to come and see Mary, your sweet smile and you set it all right with your canning advice!

Very nice video! I have almost the same collection of books and I love them as well. Some of them are very well used and may need to be replaced with new ones. I have two more books that you may be interested in, PUTTING FOOD BY and EASY TO PRESERVE. I’m not at home so I can’t give the authors names, although the EASY TO PRESERVE is put out by Georgia food extension (I believe)
So sorry I’m not giving clear information by they should be easy to find on Amazon.
I’m looking forward to the series! I started canning as a child by helping my mom can and I haven’t stopped yet, I LOVE to can our own food. My daughters are getting interested in it now that they are on their own and starting their own families. I love it!

Hi Mary! I have a cranberry salsa recipe that makes a big batch that I was wondering if I would be able to can. How do I know what ingredients of my recipe allow it to be water bath canned, and could I used a cranberry sauce canning recipe as a guideline to preserve the salsa?

I recently purchased the Home Preserving book you showed first as well as the Ball Blue Book. Hoping this summer will be my canning summer. We have so many farmers markets in this area to grab what I don’t grow. Many vendors accept orders by the bushel if you call ahead. So far I’ve only done that with produce to freeze. Yes, I have more than one freezer. 🙁. Some give a price break if you accept seconds or less than perfect produce. No harm in asking, right? So looking forward to your step-by-step tutorial. Also fun to go to the pick your own farms.

I was wondering if you know if the juice extracted from pumpkin (while prepping for dehydration) can be canned. If so, what could be some good uses for it? Also, I’m thinking it would be a pressure canner because pumpkin is low acid. I hate to throw away all that juice! The only pulp in it is the small amount that pushed through the flour towel during my straining process.

I needed this video. Canning seems very natural for so many talented (and courageous People) but for me, it is a sweet mystery. I loved this video. I am going to buy that Ball water canner and try my hand at water bath canning something. I have an American 921 canner that I bought, with the best of intentions, OVER 2 YEARS AGO , and it is still sitting on the pantry floor IN IT'S UNOPENED BOX!!! I have a fear of pressures canning. Is that a thing?😂 Anyway, "intention to can" is NOT going to get anything canned. I think I am going to take your advice and start with the WATER BATH CANNING method. We use all those" water canning" foods that you mentioned. Salsas especially. Peach rosemary jam!!!
