In Italy they don't even use a canner. They just put the very hot sauce or crushed tomatoes in the jars, turn them upside down and cover them with heavy blankets and let them cool over night under the blankets. They've been doing that for centuries.

I use a teaspoon of vinegar instead of lemon juice for extra acid! I also use a teaspoon of sea salt in canning jar! Have done this for years!

Seriously this is the best water bath tutorial I've seen! Thank you for so much detail description! The finger tight tip is very helpful, and I would have just naturally tipped the jars when removing to pour off that little bit of water. Thanks!

this is the BEST how to on this. you are a rare excellent canning teacher in that you follow safety procedures, but still make it clear and understandable. I find that usually the only people I can follow are doing things you aren't supposed to.... thank you so much! planning to gift some crushed tomatoes from my garden for xmas this year and now I feel ready
