The health benefits of beets are fairly well known to individuals and have seen mainstream success as being heralded as an important vegetable to increase overall health. In the last week alone, I have seen the health benefits of beets discussed on numerous health food shows. Although many health conscious individuals are aware of the health benefits of beets and the vitamins and nutrients associated with the vegetable, many of these individuals are turned off by beets because of their unappealing taste. As will be seen, the health benefits of this deep purple vegetable are varied and important enough for individuals to overcome this hesitation to beets (sometimes referred to as beet root) and find recipes that allow one to enjoy their taste as much as possible.

One of the important health benefits of beets is their high content of anti-oxidants. Beets have a high number of these anti-oxidant properties, as well as a unique mix which can supply much needed nutrients to the body. Although the studies on beet consumption and heart health are still in the preliminary stages, there has already been some encouraging results that have demonstrated the ability of beets to help increase overall heart heath.

As well, another one of the great health benefits of beets is in association with their anti-cancer benefits. As mentioned, beets have a high level of anti-oxidants and anti-inflammatory properties, which can be quite important in reducing the risk of different types of cancers. This potential has been confirmed by numerous studies, with promising results shown in reducing the risk of cancers such as colon cancer and prostate cancer.

Lastly, the health benefits of beets can be found in their numerous and high concentration of vitamins and minerals. As already mentioned, beets are a good source of vitamin C and magnesium. In addition, beets also contain a quality amount of potassium, iron, vitamin A, vitamin C, beta-carotene, folic acid and more. In addition, beets are a good source of fiber, which can also bring about many health benefits to those individuals that consume it. Dietary fiber is an important part to a well balanced diet. As well, beets are able to help detox the body and also help support mental health.

Beets can be difficult to stomach at times and on their own are often described as being unappealing. Adding beets to a healthy shake recipe may be one way to get the health benefits of beets. This way, you can add other ingredients to help make the taste less noticeable and/or more appealing. Clearly, those individuals who are looking to increase their overall health should look into consuming beets because of their unique mix of health benefits and nutrients. Hope you don't discard the beet greens(large leaf part). A cup of those provides 1300mg of potassium. A medium banana only provides about 300mg of potassium, so most people aren't getting near enough considering your DAILY intake need of potassium is 4700mg of potassium. You can eat them in a salad or even better, blend with a few cups of Kale and Spinach. Blend for a few minutes in a cup or two of water or coconut milk/water (get the organic with less than 2gm's of sugar) and add some stevia and it tastes really good. You can add some fruit if you're not trying to lose weight. I drink 7-10 cups of this stuff a day and it's so good for your body :)

Can I make a couple of suggestions? First, when you handle beets when the skin is off of them, wear gloves to prevent your hands from staining. Secondly, the knife you're using looks like a serrated bread knife. Not really a good knife to use when you're cutting the stems off the beets, especially because you weren't holding the beets when you cut the stems. Third, watch how professional chefs curl their fingers on food when they're cutting or slicing food. The way you're holding the beets as you cut them, you're taking a risk of cutting two fingers and your thumb. Last, again, you're taking a huge risk seriously cutting yourself because you're cutting beets that are slippery on a glass plate that is slippery, and has a dip in it. Until you perfect your cutting/slicing technique, you should use a cutting board. While you may have prepared beets many times in totality like you did in this video, and you haven't cut yourself, there's always a first time.

DO IT THIS WAY:
Remove the stems...you can use the leaves in a salad
Peel the beets with a peeler then cube (with a knife on a cutting board, be careful, m-kay?)
Put in skillet with enough butter to cover bottom, salt, pepper, and a dash of cinnamon. [edit] pumpkin pie spice is even better.
Cover and simmer gently for about 20 minutes. Let it get lightly caramelized.

My question is does boiling beets remove important nutrients or does the skin protect from nutrient leeching ?
