Roasted Beets, healthy, delicious, and naturally sweet!

Jarred beets are readily available on the shelf in your local grocery store - but roasting fresh beets is so easy to do and the taste is totally different from that found in a jar. The flavor of a roasted beet is almost naturally sweet in nature - you will be pleasantly surprised :) Enjoy.

Ivo’s Roasted Beets
Ingredients
• Fresh beets, 1 ½ lbs.
• 3 – 4 TBSP Extra Virgin Olive Oil (EVOO)
• ½ - 1 TBSP paprika
• ¾ - 1 TBSP dried oregano
• Salt to taste

Method
• Wash beets, peel them, and then cut into wedges (i.e. into quarters)
• Place in a bowl and drizzle the EVOO, paprika, oregano, and salt to taste
• Toss beets to ensure they are all evenly coated
• Add beets to a baking sheet, which is lined with parchment paper
• Two baking methods:
1) Preheat your oven to 375 degrees F., then cook beets for 45 – 60 minutes
2) Convection bake in your toaster oven, at 375 degrees F, for 20 – 25 mins

Notes:
• Cook time is much quicker in a toaster over, as you can see above
• You can also add fresh carrots to this mix – just prepare them the exact same way as the beets and mix them in together with the beets, at the time of seasoning and season the beets and carrots together

I season them with salt, pepper, smoked paprika, thyme, oregano, garlic powder, cardamom powder, cumin powder, cinnamon powder, turmeric powder, clove powder. I don't peel them but scrub them thoroughly. I put the spices and olive oil in a freezer bag with the sliced ​​beetroots and mix and let it steep for 20 minutes and then put them in the oven. Smoked fish is really delicious on the side

I can't tell you how much I hate it beats before I made your recipe. It was delicious! I couldn't stop eating them in fact I couldn't believe I just made beets. 375 for 40 minutes was too hot and too long for my particular oven so I'm going to reduce it to 350 in about 35 minutes then check on them. I did add a little onion and garlic powder as well and it was scrumptious. Thank you so much because I'm trying to lower my blood pressure and these are one of the foods of Incorporated

I acquired some beets and didn't have a clue what to do with them but I didn't want to waste them, which is why I'm here. I'm still learning and exploring ways to cook them. I wasn't to impressed with my first experiment but had some of the cooked beets left over in the fridge. I listened to what you said about potatoes and carrots being a good mix with beets so I added them to some stew I had and that was delicious beyond my wildest expectations.

Thanks for this instructive video. I tried tinned beets as a child and they were disgusting 🫣. Never been near them since, but I love roasted veggies, so I'm going to give them another go. The beets you roasted look delicious! 😊

New to eating beets i steamed it, cut it up and sautéed in olive oil and salt .. sightly crisp exterior and sweet like a carrot so good i wanna try to let it finish in some butter
