Soaking potatoes in water removes some of the starch, resulting in crunchier potatoes if you're making anything crunchy like fries, and a nicer texture when they're cooked in soups and stews.

I agree, easier is better. I bought a mandolin slicer last year to make air fryer waffle chips or fries but only did it 2x.. I should get back on that.

Rose, French fry companies sonetimes use tapioca starch instead of corn starch. Have you tried that?
